Ayurvedic Diet

The Ayurvedic diet divides food into six groups or tastes: (see picture below right: from left to right and from the top) sour, bitter, salty, pungent, sweet and astringent. The healthy diet should include all six tastes, if not in one meal, then across the course of a day. If one or more tastes are missing from the diet, this will result in an imbalance of the Doshas.

Everyone has a combination of the three Doshas: Vata, Pitta and Kapha. One or two Doshas may dominate or, as in this case (see image left), they maybe balanced.

 

 

Foods that Pacify or Aggravate the Doshas

FOODS THAT PACIFY VATA

Avocados, bananas, berries, strawberries, fresh dates, figs, grapefruit, lemons, limes, oranges, grapes, apricots, mangoes, papaya, pineapple, cooked vegetables, especially asparagus, carrots, fennel, garlic, green beans, leeks, parsnip, spinach, tomatoes, butter, soft cheese, milk and most dairy produce, honey, molasses, mung beans, eggs, fish and seafood, mustard, pickles, salt, seaweed, soya sauce, vinegar, all nuts in moderation, beer and wine in moderation, sunflower seeds, all spices, cooked oats, rice, sprouted wheat bread, wheat, sesame oil, olive oil.

FOODS THAT PACIFY PITTA

Apricots, fresh dates, limes, oranges, berries and most sweet fruits, asparagus, broccoli, Brussels sprouts, cabbage, celery, fennel, green beans, mushrooms, onions (cooked), parsnips, peas, sweet peppers, potatoes, cottage cheese, cow’s milk, maple syrup, black beans, chickpeas, kidney beans, lentils, mung beans, soya beans, tofu, chicken white), freshwater fish, coconut, apple juice, grape juice, soya milk, popcorn, sunflower seeds, y cinnamon, coriander, fennel, fresh ginger, mint, barley,couscous, cooked oats, pasta, basmati rice, sprouted wheat bread, sunflower oil, olive oil.

FOODS THAT PACIFY KAPHA

Apples, cranberries, pears, most dried fruit, broccoli, Brussels sprouts, celery, mushrooms, peppers, turnips, most frozen, raw and dried vegetables, hard cheese, yogurt, chickpeas, kidney beans, brown lentils, soya beans, split peas, chicken, lamb, pork, chilli peppers, chocolate, white sugar, horseradish, carbonated drinks, coffee, icy cold drinks, popcorn, bread with yeast, buckwheat, cold, dry or puffed cereals, corn, couscous, muesli, uncooked oats, rye, wheat bran.

FOODS THAT AGGRAVATE PITTA

Bananas, grapefruit, lemons, peaches, rhubarb, strawberries and most sour fruits, garlic, tomatoes, turnips (and most pungent vegetables), salted butter, hard cheese, sour cream, yogurt, honey, molasses, miso, soya sauce, beef, salmon, sardines, tuna, lamb, pork, chocolate, ketchup, mustard, pickles, vinegar, most nuts, spirits and wine, caffeinated and carbonated drinks, many juices (carrot, cranberry, grapefruit, pineapple, tomato), sesame seeds, garlic, nutmeg, rosemary, sage, thyme, bread with yeast, buckwheat, corn, millet, dry oats, polenta, rye, corn oil, sesame oil.
