Ayurvedic Diet

The Ayurvedic diet divides food into six groups or tastes: (see picture below right: from left to right and from the top) sour, bitter, salty, pungent, sweet and astringent. The healthy diet should include all six tastes, if not in one meal, then across the course of a day. If one or more tastes are missing from the diet, this will result in an imbalance of the Doshas.

Everyone has a combination of the three Doshas: Vata, Pitta and Kapha. One or two Doshas may dominate or, as in this case (see image left), they maybe balanced.



Foods that Pacify or Aggravate the Doshas


Avocados, bananas, berries, strawberries, fresh dates, figs, grapefruit, lemons, limes, oranges, grapes, apricots, mangoes, papaya, pineapple, cooked vegetables, especially asparagus, carrots, fennel, garlic, green beans, leeks, parsnip, spinach, tomatoes, butter, soft cheese, milk and most dairy produce, honey, molasses, mung beans, eggs, fish and seafood, mustard, pickles, salt, seaweed, soya sauce, vinegar, all nuts in moderation, beer and wine in moderation, sunflower seeds, all spices, cooked oats, rice, sprouted wheat bread, wheat, sesame oil, olive oil.
